Dinner - July 8, 2010
We had a lot of fresh vegetables given to us, and I wanted to use them before they went bad. I made a stuffed white squash from a recipe I found online. I wasn't sure what to do with white squash so I looked it up and found a recipe which is basically a tuna salad, including the insides of the squash, and put back into the squash and baked. It was pretty good but needed some mayo or something, which the recipe didn't call for. I also made sauteed zucchini and yellow squash with onions in a bunch of butter in an iron skillet - always a favorite. I made stewed okra for the first time ever and it came out GREAT!!! I don't like fried okra (the only way I've ever had it) but this was fantastic - really great flavor. I basically cooked it to death in the iron skillet. I also made cool pasta salad with tomatoes, and some zucchini bread. Then I used a Paula Deed recipe for bananas foster for dessert. This is the first time I've made that too and they turned out SO much better than I thought they would. I can't wait to have them again. I didn't have any ice cream so I had to use whip cream but it was still really good.
